A lighter version of traditional mac 'n cheese.

Recipe Ingredients for "Lighter" Mac N Cheese (Martha Stewart)

6 small tomatoes
3 T extra virgin olive oil
1 1/2 tsp thyme leaves
5 slices white bread
2 T butter, unsalted
1 lb macaroni
2 c chicken stock, fat free
5 T flour, all-purpose
1/8 tsp nutmeg
1/8 tsp cayenne pepper
2 c milk, 1%
8 oz cheddar cheese, extra sharp & grated
1 oz Parmesan cheese, grated
1/8 tsp salt
1/8 tsp pepper

Recipe Directions for "Lighter" Mac N Cheese (Martha Stewart)

  1. Preheat oven to 400 degrees. Slice tomatoes into twenty-four 1/4" slices and spread in single layer on 2 rimmed baking sheets. Drizzle each sheet with 1 T oil and sprinkle with 1/2 tsp thyme, salt & pepper. Bake until tomatoes are softened, about 20 minutes. Remove pans, but leave oven on.

  2. Process bread in food processor till coarse crumbs form. Melt 1 T butter with remaining T oil in medium skillet over medium heat. Add breadcrumbs & toss to coat. Season with salt & pepper & set aside.

  3. Cook pasta in boiling water until almost al dente, about 5 minutes. Drain & run under cold water to stop cooking. Transfer to a large bowl & set aside.

  4. Whisk 1/2 C stock into flour in a medium bowl & set aside. Melt remaining 1 T butter in medium saucepan over medium heat. Stir in nutmeg, cayenne, remaining 1/2 tsp thyme, and 1 tsp salt. Add mild & remaining 1 1/2 C stock. Whisk in flour mixture. Bring to a boil, whisking frequently. Add cheeses, cook, stirring until melted. Pur over macaroni, stirring to combine.

  5. Put eight 4 1/2-by-1 1/4-inch ramekins on a baking sheet. Put 2 tomato slices in bottom of each ramekin. Divide macaroni mixture evenly among ramekins. Top each with a tomato slice. Sprinkle with breadcrumbs & thyme sprigs. Bake until bubbling & golden brown, about 30 minutes. Serve immediately.
