Not the healthiest of options but when you really want that creamy goodness, this is a reasonable (and delicious) recipe!

Recipe Ingredients for Lighter Fettuccini Alfredo w/Broccoli

1 c skim milk
3 T unsalted butter
2 T flour
1 c grated parmesan cheese
2 c steamed broccoli florets
1 pinch salt
1 pinch pepper
1/2 lb pasta

Recipe Directions for Lighter Fettuccini Alfredo w/Broccoli

  1. Cook pasta per directions on the box.

  2. Meanwhile, heat milk in medium sized saucepan at medium heat until just boiling.

  3. Disolve flour* in enough cold water to make a thin paste. Add to boiling milk.

  4. Stir until mixture starts to thicken.

  5. Gradually add cheese** to mixture and stir continually to avoid clumping.

  6. When mixture has thickened to desired consistency, season to taste with salt & pepper.

  7. Drain pasta. Return to pot. Add sauce and steamed broccoli and mix well.

  8. Serve with extra parmesan to sprinkle on top.

  9. * Best with Wondra flour - which is really fine and disolves easily.

  10. ** Best with Parmigiano Reggiano - yum!
