Delicious Enchilada with less fat :)

Recipe Ingredients for Lighter Enchilada's

6 tortilla Tortilla
0.5 cup Cheese
6 tbsp Sour Cream Light
1 cup Old El Paso Sauce Enchilada Mild
4 oz Neufchatel Cheese
1 tbsp chopped Onions
2 cup, chopped or diced Chicken, Breast, Meat Only
1/2 cup Black Beans

Recipe Directions for Lighter Enchilada's

Combine cooked chopped chicken, Neufchatel, sour cream, and onion. Roll up in the tortillas. Prepare a baking pan by pouring a layer of enchilada sauce, only enough to coat. Place rolled up enchilada's, seam side down. in the pan and cover with enchilada sauce and mexican blend shredded cheese. Bake for 20 minutes on 300.
