Scaled-down version of Crabmeat Mornay. You can also use 1/3 cup Egg Beaters instead of the egg yolks if you like.

Recipe Ingredients for "Lighter" Crabmeat Mornay

1 pound crab meat
3 egg yolks
1/4 cup fat free half and half
10 3/4 oz cream of chicken soup 98% fat free
3 oz lowfat milk 1%
1 tablespoon butter
1/4 tsp salt
4 tablespoons reduced fat mayonnaise
2 tbsp grated parmesan cheese

Recipe Directions for "Lighter" Crabmeat Mornay

  1. Preheat oven to 400 degrees. Grease a 1 1/2 quart casserole, or 4 individual casseroles.

  2. In a large bowl, mix the egg yolks well with the half and half. Stir the milk into the cream of chicken soup in a sacuepan and heat gently. Reserve scant 1/4 cup soup for topping.

  3. Stir the rest of the soup slowly into the egg yolks mixture. Add in the butter, salt, and crabmeat. Turn the mixture into the prepared casserole dish(es).

  4. Combine the reserved soup with the whipping cream and spread over the top of the casserole(s). Sprinkle with the parmesan cheese.

  5. Bake at 400 degrees for 20 minutes or until lightly browned and heated through.

  6. OPTIONAL TOPPING: you can use 6 tablespoons mayonnaise in place of the soup-whipping cream topping. This is helpful if you don't have heavy or whipping cream available. It tastes just as good.
