Adapted from June 2010 Everyday Food Magazine. I made it lighter by omitting the mayo and using nonfat yogurt. Also, poached chicken keeps the fat down.

Recipe Ingredients for Lighter Chicken Salad with Apricots and Basil

6 oz Greek yogurt, plain, non fat
2 oz dried apricots, turkish, minced (about 5)
1/3 cup celery, minced (about 1 stalk)
1/4 white onion, minced
1/3 cup basil, torn (about 6~8 large leaves)
3/4 pound boneless, skinless chicken breasts (2 small)
1 clove garlic
1/3 tsp salt
1 tbsp white wine vinegar

Recipe Directions for Lighter Chicken Salad with Apricots and Basil

  1. Poach the chicken breasts; cover with 1 inch salted water, bring to a boil for 2 mins, then cover and turn off heat. Let stand 20~30 mins. Remove from water and, when cool enough to handle, roughly chop.

  2. Combine chicken, apricots, celery, onion and basil in a medium bowl.

  3. In a small bowl, mix yogurt, vinegar and garlic. Add salt and pepper to taste.

  4. Add the yogurt mixture to the chicken mixture and combine. Chill before serving.
