Lightened version of Gingerbread.

Recipe Ingredients for Lightened Gingerbread

2 1/4 cups flour, all-purpose
1/3 cup Splenda
1 cup Molasses, Dark
3/4 cup hot water
1/2 cup Smart Balance
1/4 cup egg substitute
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
3/4 tsp. salt

Recipe Directions for Lightened Gingerbread

  1. Heat oven to 325 degrees. Grease and flour square pan, 9x9x2 inches. Measure all ingredients into a large mixer bowl. Blend 30 seconds on low speed, scraping bowl constantly. Beat 3 minutes on medium speed, scraping bowl occasionally. Pour into pan.

  2. Bake 50 minutes or until wooden toothpick inserted in center comes out clean. Serve warm, sprinkled with powdered sugar, cut into twelve pieces.
