Recipe Ingredients for Light and yummy corn "enchiladas"

12 corn tortillas
1 lb lean ground turkey
1 1/2 c diced tomatoes
1 c black beans
1/2 c onion

Recipe Directions for Light and yummy corn "enchiladas"

  1. -Season ground turkey to taste, using herbs and spices. Brown with onions.

  2. Once cooked through, add black beans and tomatoes.

  3. -Spoon mixture evenly in the 12 corn tortillas, roll, place in a pan and bake on 375 for about 10 minutes.

  4. -Top "enchiladas" with salsa or ff sour cream, if desired. Enjoy with a green salad and a tablespoon of light vinaigrette -- this should keep the entire meal at around 400 calories.
