Light White Sauce Recipe

This is a slightly modified version of white sauce with some punch to it.

Recipe Ingredients for Light White Sauce

2 cloves of minced garlic (it is about 2 big teaspoons of jarred garlic)
1/3 tbsp light butter
3 3/4 cups organic fat free milk
1/3 cup all-purpose flour
1 cup shredded Fontina cheese
1/2 cup grated cheese, Asiago (or Parmesan or Romano)
1 1/2 tsp salt
1/2 tsp pepper
1 tsp Nutmeg, ground
1/2 tsp chili powder
1 pinch of Pepper, Cayenne
1 tsp red pepper flakes

Recipe Directions for Light White Sauce

  1. Heat your pot to medium high heat.

  2. Add butter and garlic, remove from heat when you can just start to smell the garlic.

  3. Stir in 3 cups of milk.

  4. Combine 3/4 cup of milk with the flour in a bowl and blend thoroughly with a whisk.

  5. Add the flour mixture into the pan and return it to medium heat.

  6. Stir constantly with a whisk and bring it to a boil.

  7. Cook it for 1 minute or until thick (stop if it thickens before 1 minute is up).

  8. Remove from the heat and add spices and cheeses.

  9. Stir until smooth.
