Diet friendly version of Granny Valle's Pumpkin Pie

Recipe Ingredients for Light version of Granny Valle's Pumpkin Pie

1 c Egg Beaters
3 1/2 c pumpkin
1.33 c Splenda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
4 tbsp margarine, light
1 3/4 c milk, lactose-free, fat free
2 pie crust, deep dish

Recipe Directions for Light version of Granny Valle's Pumpkin Pie

  1. Beat egg beaters slightly; add pumkin, sugar, salt & spices. Mix well.

  2. In a separate saucepan, heat milk & margarine till the margarine melts (being careful not to scald the milk).

  3. Add hot milk & margarine to the pumpkin mixture & stir thoroughly.

  4. Pour into uncooked, deep dish pie shell (9").

  5. Bake in 450 degree (F) oven for 15 minutes, then reduce the heat to 350 degrees (F) and bake 35-40 minutes until filling is set and firm (a knife inserted in the middle comes out clean).

  6. NOTE: You can make this pie shell-less as well, to reduce calorie & fat content,
