Recipe Ingredients for Light Vegetable Soup

1 (150g) zucchini, chopped
1 (150g) potato, peeled and chopped
1 white onion, shredded
1 tbsp celery leaves, chopped
100 g peas, frozen
2 tomatoes, peeled and sliced
10 g fresh parsley, finely chopped
1 tsp vegetable broth, low sodium
1/3 tsp ground black pepper
1 tbsp vegetable oil
3 cups warm water

Recipe Directions for Light Vegetable Soup

  1. Place all the vegetables into a deep saucepan. Add the vegetable broth, black pepper, celery leaves and parsley. Add the oil. Stir well with a wooden spoon. Cover and pour over a medium high heat. Allow to cook, stirring occasionally, about a 3 minutes, or until the onion and the sliced tomatoes are soft. At this point add the water. Bring the heat to high. Cover and cook covered for about 40-45 minutes, or until the liquid is reduced almost in half and the potatoes are soft.

  2. Serve immediately.

  3. The calories are for this basic recipe, but just before serving you can add some small kind of pasta or rice spaghetti.

  4. Or once served, you can grate some Parmesan cheese on the top.
