Recipe Ingredients for Light Tortellini Alfredo

3/4 cup half-and-half
1/8 tsp nutmeg
1 tsp cornstarch
2 oz parmesan cheese (grated, 1 cup)
9 oz tortellini

Recipe Directions for Light Tortellini Alfredo

  1. Bring 4 qt water to a boil in a large pot for pasta.

  2. Simmer 1/2 cup half-and-half, nutmeg, and 1/4 teaspoon of salt in a large saucepan. Whisk cornstarch and remaining 1/4 cup of half-and-half together, then whisk into the simmering mixture. Continue to simmer the sauce, whisking constantly, until it has thickened, about 1 minute. Cover and keep warm off the heat.

  3. When water is boiling, stir in 1 tbsp salt and the tortellini. Cook, stirring constantly, until pasta is almost tender but still a little firm to the bite. Reserve 1/2 cup of the pasta cooking water, then drain the tortellini.

  4. Return the half-and-half mixture to medium-low heat and whisk in the pasta cooking water. Add pasta and cook, gently stirring pasta with a wooden spoon, until the sauce has thickened slightly and thoroughly coats the pasta, about 1 minute. Season with pepper to taste.
