Lean schnitzel fillets cooked in a rich tomato & wine sauce

Recipe Ingredients for Light Tomato & Wine Schnitzel

500 g
3 tbsp olive oil
2 large tomatoes
3 tbsp ketchup
1 cup dry white wine
1 tsp salt
1/2 tsp chili
1/4 tsp ground black pepper
1/8 tsp cinnamon
1/16 tsp sugar

Recipe Directions for Light Tomato & Wine Schnitzel

  1. Dice 1 tomato, fry in pan with 3 tbsp olive oil

  2. Add steaks after salting them, fry until sealed from both sides, then remove steaks from pan and set aside.

  3. Add most of the wine, and lower heat.

  4. In the meantime, put the remaining 1 tomato in a food processor with the ketchup, and make a smooth puree. Add it to the pan,add condiments and let it simmer for 15 mins.

  5. When the sauce is done, put it in another pan and return steaks to the hot pan to cook from both sides for a few more minutes, adding the remaining wine and a couple tbsp of the sauce to keep them from burning
