Light and tasty sauce for your favorite pasta; great over angel hair.

Recipe Ingredients for Light Tomato & Asparagus Sauce for Pasta

1 T olive oil
5 garlic cloves
4 T shallots, chopped
3 plum tomatoes, seeded & chopped
1/2 c asparagus, cut into bite size pieces
1/8 c red wine
1/2 tsp oregano, dried
1/2 tsp basil, dried

Recipe Directions for Light Tomato & Asparagus Sauce for Pasta

  1. Heat olive oil in skillet. Sautee chopped garlic & shallots till softened. Add herbs and chopped tomatoes and cook 2-3 minutes. Add chopped asparagus and red wine. Cover and cook till asparagus is tender-crisp, about 5 minutes.

  2. Serve over pasta.
