Recipe Ingredients for Light Summer Pasta Salad

1 pound rotini pasta
2 cups broccoli
2 cups cucumber
1 1/2 cups diced tomatos
1 1/2 cups red pepper
2 cups carrots
1/2 pound turkey (1/2" thick slab from deli counter, or fresh roasted)
4 oz cheddar cheese (optional)
1/4 cup pine nuts
1/2 cup Italian Dressing

Recipe Directions for Light Summer Pasta Salad

  1. Cook pasta according to box, drain, rinse and chill.

  2. Chop vegetables, turkey and cheese.

  3. Mix pasta with vegetables, turkey and cheese.

  4. Serve in bowls, with pine nuts and dressing on the side.
