This is a sweet tasty pudding. The use of italian ricotta rather than the use of marscapone reduces the fat content. A pudding is a rare treat whilst on a diet and with this you can be guilt free.

Recipe Ingredients for Light Sultana and Lemon Cheesecake

45 g sultanas
2 tbsp semolina
3 egg yolks
100 g lemons, zest and juice
3 tbsp jam, lemon marmalade
3 tbl liquor, brandy
340 g cheese, riccota
85 g vanilla extract
2 oranges, regular
2 oranges, small sweet

Recipe Directions for Light Sultana and Lemon Cheesecake

  1. Place the sultanas in a bowl, add tge brandy and leave to soak for at least 30 minutes or until it is al absorbed.

  2. Preheat the oven to 180c. Line a non-stick loose bottom tin with buttered baking parchment. Put the riccota cheese through a fine sieve into a mixing bowl. Beat in the eggs, lemon juice, vanilla. Then stir in the zest.

  3. Sprinkle 1 tbsp of the semolina into the tin and tap around. Add the rest of the semoline to the egg and ricotta mixture. Spoon the mixutre into the prepared tin then smooth the top. Bake for 40 mins. Leave to cool in the switched off oven for 2-3 hours with the door ajar.

  4. For the topping peel the fruits removing pyth and segment. Warm the marmalade until melts. Remove the ticheesecake from the tin, arrange fruit and brush marmalade over fruit and surgace as a glaze.
