A lighter version of basic mashed potatoes, this side dish is gluten free, dairy free and easy to make.

Recipe Ingredients for Light Smashed Potatoes

1590 grams Potatoes, Boiled, Cooked In Skin, Flesh
3 1/2 serving Chicken Cooking Stock
50 grams Buttery Spread
2 cube Garlic
5 grams Sea Salt
1 tsp Pepper, White
1 tsp Pepper, Black

Recipe Directions for Light Smashed Potatoes

  1. Scrub potatoes and cut into pieces. Leave skins on.

  2. Place in large pot of water. Cover and heat until boiling.

  3. Simmer covered for 20 minutes or until they reach desired tenderness, stirring occasionally.

  4. Drain potatoes and return large pot to stove.

  5. Melt a small amount of the buttery spread in bottom of pot over medium heat. Add garlic and briefly sautee.

  6. Add chicken stock and rest of buttery spread. Bring to a light boil.

  7. Add drained potatoes.

  8. Mash, smash, stir or whip to desired consistency.

  9. Mix in salt and pepper to taste.
