This Shepherd's Pie has been a favorite of mine since I found the recipe in Cooking Light... adapted slightly here by increasing beef and adding peas

Recipe Ingredients for Light Shepherd's Pie

16 oz Ground Beef
1 cup Beans, Snap, Green
1 cup, chopped Onions
2 tsp Italian Seasoning
3.25 cup, pieces or slices Mushrooms
0.25 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
4 oz Wine
14 oz Diced Tomatoes with Basil Garlic and Oregano
1/4 tsp Salt
1/4 tsp Salt
0.13 tsp Pepper, Black
32 oz Potatoes, Red, Flesh And Skin
0.33 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1/2 cup Peas, Green

Recipe Directions for Light Shepherd's Pie

  1. Preheat oven to 375 F and prepare a two quart casserole dish or two smaller dishes by spraying with non-stick cooking spray.

  2. Steam green beans for 3 min and set aside.

  3. Chop Onions, quarter 8 oz of mushrooms, and prepare potatoes for mashing - I just quarter and leave on the skins, but you may want to peel them. I boil the potatoes while preparing the meat mixture. You will mash the potatoes with the milk and salt and pepper and then use them to form a top crust over the meat mixture.

  4. Prepare meat mixture as follows:

  5. Cook ground beef with chopped onions (can add a clove of minced garlic if you like). Once beef has browned and no pink remains, drain off any fat. Add the Italian Seasoning and cook for 1 min. Add the mushrooms and cook for two minutes. Stir in the flour. Gradually add the wine stirring constantly. Add the tomatoes, salt and pepper. Cook 2 minutes while stirring regularly. Remove from heat and add the green beans and peas (thawed, but not cooked).

  6. Assemble the casserole in a casserole dish sprayed with non-stick spray. Meat mixture on the bottom with a layer of potatoes on top. I dust the top with paprika and old bay.

  7. Bake at 375 F for about 30 minutes, or until mixture starts to bubble. Turn on the broiler to brown the top.
