Recipe Ingredients for Light rye bread

870 g. white flour
440 g. whole grain rye flour
1/2 cup warm water
2 1/2 tsp yeast
1 1/2 tbsp salt
3 1/2 cups warm water

Recipe Directions for Light rye bread

  1. Mix flours in a bowl (Mixmaster bowl if you have a dough hook). Make a well in the middle of the flour; put the yeast and 1/2 cup warm water in the well. Put the salt around the edges of the bowl (not touching yeast). Let rise 10 minutes (room temperature).

  2. Add remaining 3 1/2 cups warm water; mix and knead (by hand or with Mixmaster). Dough will be sticky. Cover with plastic wrap and let rise at room temperature until doubled in size (about 90 minutes). Punch down, re-cover with plastic wrap, and let rise in the refrigerator several hours or overnight.

  3. Line a large baking sheet with baking parchment paper. Punch down dough, divide into four round loaves, and place on parchment. Put loaves in cold oven and heat to 450°. After 20 minutes, reduce heat to 400°. Bake 30 minutes longer or until desired brownness.
