Delicious homemade pancakes that are neither too sweet nor too greasy.

Recipe Ingredients for Light Raspberry Pancakes

1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons sugar
2 teaspoons margarine
1 large egg
1 cup raspberries
1 cup skim milk

Recipe Directions for Light Raspberry Pancakes

  1. In a bowl, combine the flour, sugar, baking powder and salt.

  2. In a separate bowl, combine the egg, milk, and margarine; stir into dry ingredients just until moistened.

  3. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

  4. Keep pancakes warm in the oven (low heat) until you are ready to eat. Sprinkle pancakes with the remaining fresh raspberries.
