Potato salad with Hellmann's light mayonnaise, Jennie-o turkey bacon.

Recipe Ingredients for Light Potato Salad w/ Turkey Bacon & Eggs

3 1/4 lbs potatoes
1/2 cup light mayonnaise
2 hard boiled eggs
5 tbsp pickle relish
3 oz turkey bacon
1/2 cup yellow onion, chopped
1/2 cup celery, chopped
1/2 tsp salt

Recipe Directions for Light Potato Salad w/ Turkey Bacon & Eggs

  1. Boil unpeeled potatoes until tender (about 40 minutes).

  2. Peel potatoes.

  3. Chop potatoes into 1 inch pieces.

  4. Chop bacon into 1/2 inch pieces.

  5. Cook bacon in frying pan.

  6. Drain bacon on paper towel-topped plate.

  7. Mix potatoes, bacon, mayonnaise, relish, onion, celery, and salt.

  8. Chop hard boiled eggs.

  9. Fold in eggs.
