Recipe Ingredients for light passover cheesecake

4 tbsp cream cheese, fat free
100 g 1% cottage cheese
1 tbsp soy flour
30 g matzo meal
3 tbsp egg white
1 small apple
1 tsp vanilla extract
2 tsp cinnamon

Recipe Directions for light passover cheesecake

mix cream cheese (actually 8 tbsp of FAT FREE cheese) with cottage cheese, flour (optional depending on keeping kosher or not- can use matzo meal), egg, sweetener or 1/3 c sugar, vanilla. soak matzo and break into bits. place in dish and cover with sliced apples and cinnamon. spread cream cheese mix on top and bake at 350 for 30 mins.
