Modified but amazingly savory mushroom and asparagus risotto.

Recipe Ingredients for Light Mushroom and Asparagus Risotto

1 cup arborio rice
1 tablespoon unsalted butter
4 ounces of dry white wine
3/4 cup shallot, thinly sliced and diced
3 cloves of garlic, minced
5 cups of fat free, low sodium chicken broth
2 cups chopped asparagus
1/2 cup parmesan cheese
10 ounces fresh mushrooms, thinly sliced
3 tablespoons whipped cream cheese
1 tablespoon fresh thyme, chopped
1 tablespoon black pepper
1 pinch of nutmeg

Recipe Directions for Light Mushroom and Asparagus Risotto

  1. thinly slice asparagus (on a diagonal for best presentation), thinly slice mushrooms, mince garlic, thinly slice and dice shallot.

  2. in a medium to large sauce pan, melt unsalted butter and sautee shallot.

  3. once shallot is softened (~3 minutes), add garlic, nutmeg, pepper and thyme and stir until fragrant (~1 minute).

  4. add asparagus and mushrooms and cover with chicken broth. simmer for 1 - 2 minutes and stir in arborio rice. add wine.

  5. stir often as mixture reduces. once mixture reduces by half, add cream cheese, stirring to incorporate well. continually test texture of arborio, adding more broth if needed.

  6. when arborio is cooked to al dente ~ 30 minutes, add parmesan cheese. allow to simmer until liquid barely covers rice and vegetable mixture and remove from heat. serve immediately.
