I was just curious to see what would happen if I put in the healthier substitutions of my other mini cheesecake recipe. I wonder how it would make up. One of these days I'll give the recipe a shot and report back. If you try it, let me know how it bakes up and tastes. You'll need five 4 1/2" mini springform pans for this recipe. The original recipe is from allrecipes.com.

Recipe Ingredients for Light Mini Cheesecakes

216 grams graham cracker crumbs (about 3/4 cups)
1 tbsp fat free "I can't believe it's not butter"
1 tsp lemon juice
2 tsp lemon juice
16 oz Fat free cream cheese
3/4 cup Splenda Sugar Blend
1/4 cup Light whipping cream
2 tbsp Light whipping cream
1/2 cup Breakstone Fat Free Sour Cream
2 tbsp
1 1/2 teaspoon vanilla extract
2 tbsp whole wheat flour

Recipe Directions for Light Mini Cheesecakes

  1. # Preheat oven to 350.

  2. # Melt one tablespoon of butter and mix with graham crackers. Press equal amounts of the mixture into the 5 pans to form the crust. Put them on a plate and put into the fridge while you prepare the filling.

  3. # In a bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.

  4. # Bake in oven for 35 minutes. Turn the oven off and let the cake cool in the oven with the door closed for a few hours. Remove and let it cool further. Refridgerate overnight.
