Recipe Ingredients for Light Mexican Lasagna

1 lb lean ground beef (93% lean 7% fat)
1 tbsp olive oil
1 medium onion, diced
1/2 green bell pepper, diced
1 tbsp chili powder
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp coriander
1/4 tsp sea salt
3/4 cup water
1 3/4 cups Old El Paso Refried Beans Fat Free
1/2 cup newman's medium salsa
1 cup frozen sweet corn
3 oz kraft fat free shredded cheddar cheese
1 cooking spray
200 g Tortillas

Recipe Directions for Light Mexican Lasagna

  1. In a large nonstick skillet heat up olive oil over medium high heat

  2. Add onion and green pepper and cook for about 4 minutes

  3. Add meat and cook until no longer pink

  4. Stir in the water, chili powder, garlic powder, cumin, coriander and salt, bring to a boil, reduce heat; simmer, uncovered, for 5-6 minutes

  5. In a small bowl, combine beans and salsa

  6. Place two tortillas in a round 2-1/2-qt. baking dish coated with cooking spray

  7. Layer with half of the beef mixture, bean mixture and corn; repeat layers, top with cheese

  8. Bake, uncovered, at 350 for 25-30 minutes or until heated through and cheese is melted

  9. Let stand for 5 minutes before cutting

  10. Serve or garnish with lettuce and tomatoes if desired
