Great for a lighter, pasta salad with fresh veggies!

Recipe Ingredients for Light Macaroni Salad

3 cups macaroni noodles
1/2 cup carrots
1/2 cup snap peas
1/4 cup Canola Cholesterol Free Mayonnaise
1 tbsp olive oil
1/2 tbsp red wine vinegar
1/4 tsp salt
1/4 tsp pepper
1/4 cup parmesan cheese

Recipe Directions for Light Macaroni Salad

  1. Cook noodles according to directions

  2. Cut carrots and snap peas into thin slices

  3. MIx remaining ingredients, except parmesan cheese

  4. Drain noodles.

  5. While noodles are still hot toss with veggies and dressing.

  6. Sprinkle in salt and pepper and mix well.

  7. Refridgerate for 1 hour or more.

  8. Add grated or shredded parmesan cheese before serving.
