Recipe Ingredients for Light Macaroni and Cheese

8 oz. Macaroni
16 oz. fat free cottage cheese
2 tbsp. flour
2 c. skim milk
1 c. shredded 2% cheddar cheese
1 tsp. salt
1/4 tsp. pepper
1 pinch nutmeg
1/4 c. shredded Parmesan cheese

Recipe Directions for Light Macaroni and Cheese

  1. Preheat oven to 375. Grease or spray 2 1/2 qt. casserole dish.

  2. Cook macaroni without adding salt to the water.

  3. Puree cottage cheese in food processor.

  4. Mix flour and 1/4 c. milk until smooth, then add rest of milk. Cook over medium until mixture thickens slightly and boils. Remove from heat; stir in cottage cheese and cheddar cheese. Add salt, pepper, and nutmeg.

  5. Put macaroni in casserole dish. Top with cheese sauce and stir. Bake for 20 min.

  6. Sprinkle Parmesan on top. Broil for 2-3 minutes, or until top is golden brown.
