I combined my light lemon pie filling with a crispy crust in a square pan to make this deliciously light lemon bar. This is the lightest lemon bar I know of online, so I've increased the serving size for a nice big lemon bar! :)

Recipe Ingredients for Light Low-Cal Lemon Bars

1 cup all-purpose flour
1/3 cup confectioners' sugar
1/2 cup ICBINB
1/8 teaspoon salt
3/4 cup white sugar
3 tablespoons cornstarch
3/4 cup vanilla soy milk
1/2 cup lemon juice
3 egg yolks, beaten
1/4 cup ICBINB
1 cup nonfat plain yogurt, strained & beaten smooth (should have consistency of sour cream)

Recipe Directions for Light Low-Cal Lemon Bars

  1. For Crust: Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together the flour, 1/3 cup of confectioners' sugar, and butter until butter is in very small crumbs. Press into the bottom of a 8x8 inch pan. Bake for 25 minutes in the preheated oven, or until firm and golden.

  2. For filling: While crust is baking, combine sugar and cornstarch in a medium saucepan. Stir in milk, lemon juice, and egg yolks.

  3. Cook over medium heat until thickened and bubbly, stirring constantly. Remove from heat, and stir in butter or margarine and lemon zest. Cool to about room temperature. Fold in yogurt.

  4. Spread filling in prepared crust. Bake at 350 degrees F for 30-35 minutes or until set.

  5. Allow bars to cool completely, about 1 hour. Chill in refridgerator for at least 3 hours to make cutting easier. Dust with confectioner's sugar before serving.
