Recipe Ingredients for Light and Lemony Chicken

3 cup Rice, Brown, Long-grain, Cooked
0.67 cup Light
1 serving Lite Soy Sauce
12 Teaspoon Juice
3 tsp Sugars, Granulated
0.282 oz Cornstarch
4 fillet Boneless Skinless Breast Fillets
0.5 cup, chopped Onions
25 spear, small (5" long or less) Asparagus
16 oz Carrots, Baby

Recipe Directions for Light and Lemony Chicken

  1. While rice is cooking, in small bowl, combine chicken broth, soy sauce, 1 tsp. grated lemon peel, lemon juice, sugar, cornstarch, and a dash of pepper,; mix well. Set aside

  2. Spray large nonstick skillet or wok with nonstick cooking spray. Heat over high heat until hot. Add chicken (cut into strips) and onions (chopped); cook and stir until chicken is lightly browned and no longer pink. Remove skillet from heat; place chicken and onions on plate.

  3. Spray skillet again with cooking spray. Heat over high heat about 1 minute. Add asparagus and carrots (blanched); cook and stir 3 to 4 minutes or until vegetables are crisp tender.

  4. Return chicken and onions to skillet. Stir sauce well; pour over chicken and vegetables. Cook and stir just until sauce thickens. Serve over rice.
