A much lighter lemon pie filling that forgoes the cream cheese and condensed milk.

Recipe Ingredients for Light Lemon Pie Filling

3/4 cup white sugar
3 tablespoons cornstarch
3/4 cup vanilla soy milk
1/2 cup lemon juice
3 egg yolks, beaten
1/4 cup ICBINB
1 cup nonfat plain yogurt, strained & beaten smooth (should have consistency of sour cream)

Recipe Directions for Light Lemon Pie Filling

  1. In a medium saucepan, combine sugar and cornstarch. Stir in milk, lemon juice, and egg yolks.

  2. Cook over medium heat until thickened and bubbly, stirring constantly. Remove from heat, and stir in butter or margarine and lemon zest. Cool to about room temperature. Fold in yogurt.

  3. Spread filling in prepared crust. Bake at 350 degrees F for 30-35 minutes or until set.

  4. Allow pie to cool completely, about 1 hour. Chill in refridgerator for at least 3 hours.

  5. Before serving, spread whip cream topping along chim of pie and garnish with lemon zest. Store leftovers in refridgerator.
