Serves 2 hearty individual crocks Recipe adapted from Martha Stewart (and again via Joelen's Culinary Adventures)

Recipe Ingredients for Light Lattice Topped Turkey Broccoli Pot Pies

1 tbsp butter
1/4 cup medium shallot, thinly sliced (1 shallot)
1 garlic clove, minced
1 cup chicken broth
1 tbsp whole wheat flour
1 small carrot, diced
1 stalk celery, cut on the diagonal into 1/4-inch-thick slices
1 cup fresh broccoli florets, steamed
224 grams turkey breast cutlets (2 cutlets)
1 tsp parsley
1/2 sheet puff pastry, cut into long strips, thawed

Recipe Directions for Light Lattice Topped Turkey Broccoli Pot Pies

  1. Preheat oven to 425 degrees.

  2. Poach turkey breasts in water or stock until cooked through. Shred the meat.

  3. Meanwhile, melt butter in a medium saucepan over medium heat. Add shallots (or onions), garlic, salt and pepper to taste.

  4. Cook, stirring occasionally, until shallots are translucent, about 3 minutes.

  5. Stir in 3/4 cup of the stock into the saucepan and whisk the remaining 1/4 cup stock into the flour in a small bowl.

  6. Whisk the flour mixture into shallot mixture.

  7. Bring to a boil, whisking constantly. Reduce to a simmer. Cook 5 minutes, whisking occasionally.

  8. Add carrots, celery and broccoli, then bring to a boil. Stir in the shredded poached turkey and return to a boil. Remove from heat.

  9. Stir in chopped parsley. Let cool.

  10. Spoon cooled mixture into individual baking crocks.

  11. Cut the strips of puff pastry to fit over the chicken pot pie mixture in the crocks and either lay over the top to cover entirely or create a lattice pattern to cover.

  12. Bake until crust is golden brown and juices are bubbling, about 30 minutes. Remove from oven and serve immediately. (I think ours was done closer to 20 minutes.)
