Recipe Ingredients for Light Homemade Potato Salad

5 lbs potatoes, red bliss
3/4 cup onion, finely diced
1/2 tsp salt
1/2 tsp pepper
3/4 cup italian dressing
1 1/2 cups light mayonaise
6 ounces fat-free greek yogurt
1 1/2 cups diced celery
5 eggs, hard-boiled

Recipe Directions for Light Homemade Potato Salad

  1. Cook potatoes, cool, peel and slice.

  2. mIx with onion, salad dressing and season with salt & pepper. Refrigerate for at least two hours. Mix with mayo, yogurt, celery and chopped eggs.
