A lighter version of Cajun gumbo using Spanish chorizo instead of andouille or kielbasa.

Recipe Ingredients for Light Gumbo

24 oz Okra
360 grams Chicken, Breast, Meat Only
6 oz Spanish Chorizo Semi Dry Cured Sausage Mild
2 tbsp Vegetable Oil, Canola
2 large Onions
1 medium raw Bell Pepper Green
2 stalk, medium (7-1/2" - 8" long) Celery
3 clove Garlic
28 oz Diced Tomatoes
2 cup Natural Goodness Chicken Broth

Recipe Directions for Light Gumbo

  1. Saute okra in vegetable oil for 15 minutes

  2. Add onions, celery, bell pepper, half of sausage, minced garlic and 1 tsp thyme. Cook 15 min on low to medium. (Note: I used Spanish chorizo because I didn't have andouille or keilbasa.)

  3. Meanwhile brown the chicken breast.

  4. Add diced tomatoes and chicken stock. (May need more chicken stock - it will be thick). Cook five minutes.

  5. Add chicken breast and cook 20 minutes.

  6. Remove breast, cool, and shred.

  7. Add chicken back to gumbo.

  8. Cook five minutes and it will be ready to serve or hold.

  9. Season with salt, pepper, Tobasco, etc. to taste.
