Simple guacamole recipe. Serve with crackers, cheese or tortilla chips.

Recipe Ingredients for Light Guacamole

1.5 cup, cubes Avocados
0.25 cup chopped raw Vidalia Onion
0.25 cup cherry tomatoes Tomatoes, Red, Ripe
0.25 cup Lime Juice

Recipe Directions for Light Guacamole

Half two overly ripe avacados. Remove pit and peel. Add to glass bowl. Mash with a potato masher while adding in about 1/4 lemon juice (more or less to taste) Once a pureed texture is achieved add about 1/4 cup of chopped sweet vidalia onion and 1/4 of tomatoes. Can also add a dash of garlic salt or any other spices if desired.
