A fresh and fun twist on mayo-free potato salad. Delicious when made with fresh summer veggies!

Recipe Ingredients for Light and Fresh Potato Salad

3 lbs. red potatoes
5 stalks celery
1 green bell pepper
1 pint cherry tomatoes
1/2 c green onions
1 cucumber
1/2 c rice vinegar
2 T olive oil
1 c shredded carrots

Recipe Directions for Light and Fresh Potato Salad

  1. Cube and boil potatoes

  2. Chop all other veggies

  3. Pour most of vinegar and oil on potatoes and let cool. Pour remainder of mixture over other veggies.

  4. Mix it all together and serve!
