Great alternative to the original... not as hearty because I have omitted the cheese and crouton... but it saves a lot on calories and still satisfies my tastebuds!

Recipe Ingredients for Light French Onion Soup

3 medium yellow onions
2 tblsp red wine
2 tsp olive oil
2 tsp worcestershire
3 tblsp balsamic vinegar
5 beef bouillon cubes
4 cups water

Recipe Directions for Light French Onion Soup

  1. slice onions into thin rings

  2. saute in olive oil, it doesn't seem like enough, but do not add more... or you risk making an extremely fatty "light" soup.

  3. Once onions are browned add red wine and let onions absorb

  4. After one minute add 2 tblsp. balsamic vinegar and all the worcestershire sauce, let simmer for one to two minutes.

  5. Finally add water and bring to a boil, once boiling add bouillon and ramaining vinegar (if it suits your pallette or just omit it) and salt and pepper.

  6. Turn heat down and simmer until it suits your taste...
