Egg Salad minus the fat and crazy amounts of cholesterol. I like to process it until its smooth and spread it on a wheat wrap or on a bagel thin.

Recipe Ingredients for Light Egg Salad/Spread

1/2 large Egg, Yolk
3 large Egg, White
4 grams Real Mayonnaise
1 tsp or 1 packet Mustard, Prepared, Yellow
3/10 tsp Garlic Powder
2 dash Pepper, Black
2 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Light Egg Salad/Spread

  1. Boil 3 eggs.

  2. Keep 3 whites and 1/2 of a yolk.

  3. Chop ingredients and place everything in a food processor and pulse until you reach desired texture.
