Makes 12 servings



These muffins mix up quickly and when mixed right, brown up beautifully. I would add a little lemon zest if I had it to add to the taste.

Recipe Ingredients for Light & Easy Blueberry Muffins

1 cup blueberries
1 cup nonfat milk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 large egg
2 cups all-purpose flour
1/3 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt

Recipe Directions for Light & Easy Blueberry Muffins

Mix all wet ingredients. Sift dry ingredients together. Gently fold dry ingredients into the wet. Gently stir in blueberries. Divide into 12 muffin cups sprayed with cooking spray. Bake at 400 degrees for 16-20 minutes.
