Light & Delicious Coconut Cupcakes

Recipe Ingredients for Light & Delicious Coconut Cupcakes

1/2 cup flaked coconut
1 1/2 cups light coconut milk
1 box white cake mix
4 egg whites
3 cups powdered sugar
1/3 cup butter, softened
1 teaspoon coconut extract
2 tablespoons light coconut milk
1/2 cup flaked coconut (for topping)

Recipe Directions for Light & Delicious Coconut Cupcakes

  1. Preheat oven 350 F. Line cupcake baking pan with muffin cups.

  2. In a large mixing bowl, blend the cake mix, coconut, coconut milk and egg whites. Beat at low speed until moistened (about 30 seconds). Beat at medium speed for two minutes. Pour batter evenly among the muffin cups.

  3. Bake for 18 - 21 minutes or until toothpick inserted into the center comes out clean. Cool in pan for 15 minutes. Take out of pan to cool completely before frosting.

  4. Beat butter and coconut extract with mixer until combined and fluffy. Gradually add powdered sugar and coconut milk until desired consistency.

  5. Spread a thin layer of coconut frosting on top of each muffin and sprinkle with 1/2 to 1 tbsp of coconut. Repeat with each muffin. Serve with cold milk. Enjoy!
