A delicious low calorie soup recipe.

Recipe Ingredients for Light Creamy Tomato Soup

2 large onions, diced
4 cloves garlic, chopped
2 tbl olive oil
1/4 cup red wine
42 oz canned tomatoes, diced
1/2 tsp salt
1/2 tsp pepper
4 cups of beef broth
1 cup light cream

Recipe Directions for Light Creamy Tomato Soup

  1. Heat olive oil in a large pot, on medium high add diced onions and simmer for 5 minutes. Then add garlic and simmer for a few more minutes until onions are translucent.

  2. Stir in wine and let simmer for 2 minutes. Then add the tomatoes, salt and pepper. Stir well, then add beef broth and left cook on very low heat for 20 minutes.

  3. Remove from heat and let cool off. To speed this up, put in refrigerator. Next put mixture into blender ** IMPORTANT - mixture must not be hot!! Blend very little bit, to get the texture that you like. I think its better a little chunky.

  4. Pour mixture back into pot and reheat slowly for 5 minutes and then add the cream. You can sprinkle a little cheese on top too.
