Recipe Ingredients for Light and Creamy Mashed Potatoes

3 lbs potatoes, peeled, quartered
4 oz fat free cream cheese
1/2 cup reduced-fat sour cream
1/2 cup skim milk
3/4 tsp sea salt
1/4 tsp garlic powder
1/4 tsp pepper
1 tbsp chives, minced

Recipe Directions for Light and Creamy Mashed Potatoes

  1. Place potatoes in a saucepan and cover water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender.

  2. In a large mixing bowl, mash potaoes. Add cream cheese, sour cream, milk, garlic, salt and pepper; beat until smooth. Stir in chives. Sprinkle with parika.
