my version of cooking light recipe

Recipe Ingredients for light cream of mushroom soup

2 tsp olive oil
2 cups onion, chopped
1 cup carrot, chopped
2/3 cup celery, chopped
1 1/2 lbs mushrooms
7 oz. shitake mushrooms
3 cloves garlic
36 oz. chicken broth, 99% fat-free, 1/3 less sodium
1 cup water
1 tsp ground sage
1/4 tsp salt
1/2 tsp black pepper
3/4 cup half-and-half
1/4 cup wine, sherry

Recipe Directions for light cream of mushroom soup

  1. cut up vegetables using food processor.

  2. saute onion, celery, carrot in olive oil until soft

  3. add mushrooms and garlic and cook another 7 minutes on medium

  4. add broth through pepper and cover and simmer for 30 minutes or so

  5. remove from heat and puree

  6. add sherry and half and half and slowly bring heat up without boiling
