Recipe Ingredients for Light Cream of Brocolli Soup

3 cup, chopped Broccoli
1 cup, sliced Onions
2 cup Potatoes, Boiled
1 serving Garlic Cloves
1 oz Chicken Stock
1.5 cup Milk, Lowfat, Fluid, 1% Milkfat
1 tsp, leaves Thyme, Dried
0.25 tsp Nutmeg, Ground
1 1tsp Olive Oil

Recipe Directions for Light Cream of Brocolli Soup

  1. Heat olive oil in soup pan

  2. Add chopped onion to pan, and sweat until transluscent

  3. Mince and add 1 garlic clove

  4. Chop brocolli into florets, and add to the pan to roast

  5. Peel and dice 2 cups of potatoes, add to pan

  6. Add sufficient chicken or vegetable stock to cover (about 5 cups)

  7. Bring to a boil, then simmer until all the vegetables are tender

  8. With a hand blender, puree the mixture until smooth. Add milk slowly until correct consistency is reached

  9. Stir in thyme and nutmeg, and serve
