Crab cakes made from lump crab and toasted light whole wheat bread.

Recipe Ingredients for Light Crab Cakes

16 oz crab meat
1 egg
1/4 cup parsley
1 large onion
2 celery stalks
1 tablespoon lime juice
1 teaspoon dry mustard
1 clove garlic
1 teaspoon old bay seasoning
6 slices Nature's Own light honey wheat bread
1 tablespoon Kraft fat free mayonnaise

Recipe Directions for Light Crab Cakes

  1. Toast bread

  2. Crumb toasted bread in food processer and set aside

  3. Pulverize onion, garlic, and celery in food processor include celery leaves

  4. Beat egg

  5. Combine vegetables, bread crumbs, lime juice, egg, mustard, parsley, old bay, and soy sauce until thoroughly mixed

  6. Add crab meat being careful not to break apart crab too much

  7. Form crab cakes

  8. Bake crab cakes on cookie sheet in oven at 350 degrees until brown and crisp, flip and brown and crisp second side
