This rich-tasting snack cake has old-fashioned chocolate flavor, yet it's very light, thanks to the buttermilk. Extra pieces make great lunchbox treats.

Recipe Ingredients for Light Chocolate Cake

1/4 cups soy flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoons ground cinnamon
1/4 teaspoons ground nutmeg
1/4 teaspoons baking powder
1/4 teaspoons baking soda
1/4 cups packed brown sugar
1 tablespoons unsweetened applesauce
3/4 teaspoons vanilla extract
3/4 egg white
2 tablespoons buttermilk, fat free

Recipe Directions for Light Chocolate Cake

  2. Preheat the oven to 350F. Lightly coat an 8" x 8" baking dish with cooking spray.

  4. In a medium bowl, whisk together the flour, cocoa, cinnamon, nutmeg, baking powder, and baking soda.

  6. In a large bowl, whisk together the brown sugar, oil, vanilla extract, and egg. Alternately beat in a little of the flour mixture and a little of the buttermilk, beginning and ending with the flour mixture.

  8. In the bowl of an electric mixer, beat the egg whites at high speed until soft peaks form. Fold the egg whites into the batter. Pour the batter into the prepared baking dish.

  10. Bake for 25 to 30 minutes, or until a wooden pick inserted in the center comes out clean. Cool the cake in the pan on a wire rack. Dust with confectioners' sugar before slicing.
