Recipe Ingredients for Light Chocolate Angel Food Cake

2 cups egg whites
1 cup whole wheat pastry flour
1 tablespoon whole wheat pastry flour
1/2 cup baking cocoa
1 cup sugar
1/2 tsp salt
1 1/2 tsp cream of tartar
1 1/2 tsp vanilla

Recipe Directions for Light Chocolate Angel Food Cake

  1. 2 cups egg whites

  2. 1 cup plus 1 tablespoon cake flour

  3. 1/2 cup cocoa

  4. 1/2 cup sugar

  5. 1/2 tsp salt

  6. 1 1/2 tsp cream of tartar

  7. 1 1/2 tsp vanilla

  8. 1/2 cup sugar

  9. Preheat oven to 375. Separate eggs and let whites stand for about an hour to room temperature. Sift together 4 times the flour, 1/2 cup sugar, and cocoa.

  10. In large bowl, combine egg whites, salt, cream of tartar, and vanilla. Beat until whites are stiff and stand in peaks. (Don't overbeat until dry. And it helps to have a large mixer, because you'll get better volume--I use a big Kitchenaid. Sprinkle 1/2 cup of sugar into the egg white mixture while beating continually until stiff.

  11. Now fold in the flour/cocoa/sugar mixture. I use low speed on the Kitchenaid, but when I used a smaller mixer, I found it better to fold in the flour/cocoa by hand, tablespoon by tablespoon with a spatula until blended. The idea (experienced bakers will know this) is to keep the volume and just fold until the cocoa mixture disappears.

  12. Carefully push the batter into UNGREASED tube pan. Cut through the batter several times with a knife blade to get rid of air pockets and make sure the batter touches the sides of the pan all the way around. Bake for about 35 minutes. Immediately invert the pan when it comes out of the oven and let the cake cool thoroughly. Use a long knife blade to loosen the sides of the pan and let the cake down on a plate.
