I use Safflower Mayo instead of regular mayo, so the rating maybe a tad less than shown. It is a light salad that can be paired with spinach leaves or lettuce on a nice piece of wheat bread.

Recipe Ingredients for Light Chicken Salad

2 cups shredded boiled chicken
1 tsp teriyaki sauce
1/2 tsp paprika
1/2 tsp red pepper
1/2 tsp black pepper
1/2 tsp cilantro
1 tsp garlic powder
2 tbs Mayonnaise
5 baby carrots
1/2 cup kale
1/2 cup broccoli
1 mushroom
1/4 cup celery

Recipe Directions for Light Chicken Salad

Boil 2 breasts of chicken, boneless and skinless, until cooked through. Place on plate and let cool in fridge. In a medium bowl, mix the mayo, teriyaki sauce, pepper, red pepper, garlic powder, cilantro~in a Cuisinart or blender, place the raw kale, carrots, mushroom, celery and broccoli, chop/puree just a few times till almost in a shredded consistency. Place the veggie mix with the mayo mix and stir. Take the cooled/chilled chicken breasts and shred with a fork, discarding any fat/gristle/cartilage. Mix shredded chicken with veggie may mix in bowl and chill for 1 hour or serve warm. Serve with bread, pita chips, pita's or Nann.
