This light chicken salad is an all-time favorite around my house.

Recipe Ingredients for Light Chicken Salad

4 lbs boneless chicken breasts
28 oz pineapple
1 cup golden raisins
1/2 cup light mayonnaise

Recipe Directions for Light Chicken Salad

  1. Parboil chicken - let cool

  2. Plump raisons by putting them in a pan of water and boil, they will absorb some of the water. Then let them cool.

  3. Cut chicken into small cubes. Drain pineapple tidbits and add to chicken. Drain raisons and add to chicken and pineapple. Coat with mayonnaise.
