Recipe Ingredients for Light chicken salad

1 3/10 lbs chicken breast
1/2 cup light mayonnaise
1 cup diced celery
3 tbs. red onion
2 tablespoons whipped cream cheese

Recipe Directions for Light chicken salad

  1. Roast three large chicken breasts with rib bones until cooked through.

  2. While chicken is cooking, chop two ribs celery, or about one cup.

  3. Chop red onion to taste, about 1/4 cup.

  4. Let cool and pull skin and bones from chicken breasts, and pull chicken apart into smaller chunks.

  5. In a stand mixer, combine chicken, celery, red onion, light mayo, and cream cheese.

  6. Mix until thoroughly combined and whipped texture is reached.
