Recipe Ingredients for Light Chicken Parmesan

16 oz chicken breast halves, skinned
1/2 cup breadcrumbs
1/4 cup parmesan cheese
1/2 tsp italian seasoning
1/4 cup whole wheat flour
2 large egg whites
2 tsp olive oil
4 cups whole wheat spaghetti
3 cups marinara sauce
1 cup mozzarella cheese, shredded

Recipe Directions for Light Chicken Parmesan

  1. Combine breadcrumbs with parm cheese and seasoning, dip chicken in flour then egg then breadcrumbs. Cook in oil heated in pan for about 5 minutes on each side.

  2. Serve cooked pasta with small amout of sauce, then prepared chicken with sauce on top and sprinkled with cheese.

  3. Broil in oven for 3 minutes or until the cheese melts.
