Light Chicken Parmesan Recipe

Lightened version of traditional chicken parm.

Recipe Ingredients for Light Chicken Parmesan

20 oz Chicken Breast
1/2 c Progresso Italian Bread Crumbs
3/4 c Healthy Choice Traditional Pasta Sauce
1/3 c Crystal Farms Shredded Mozzarella Cheese
1 T Olive Oil
1/2 t Oregano

Recipe Directions for Light Chicken Parmesan

  1. Dump out some bread crumbs on a paper plate. Measure them.

  2. Dry the chicken breasts.

  3. Brush one side of the breasts with the EVOO, place oiled side down in the bread crumbs, brush the other side of the breasts and flip. Press several times on each side to thicken the coating somewhat. When done, remeasure the bread crumbs to see what was lost. (In the case of my 3 breasts at 20 oz. it was 1/2 c).

  4. Bake the breasts for about 5 minutes at 400, then broil briefy to really brown the bread crumbs on the top side. Be careful not to burn!

  5. Divide the sauce equally on top of the breasts and smooth over to make a coating.

  6. Sprinkle the sauce with the oregano (adjust amount to taste or add other spices).

  7. Cover baking dish with foil and bake at 325 for 15 minutes or so.

  8. Uncover, divide and sprinkle cheese, broil to melt and brown cheese.

  9. Adjust the time for thicker or thinner breasts.
